The “Tortello della Pieve”
At the heart of the Repubblica delle Foreste, the project aims to transform the “Tortello di Pieve Santo Stefano” from a traditional dish into a distinctive culinary symbol. The DOP (Protected Designation of Origin) trademark registration will not only safeguard its unique recipe but will open new prospects for the local community.
This commitment to enhancing the Tortello encompasses trademark registration, promotion and commercialisation in new contexts, generating economic opportunities.
The setting up of a workshop with a professional kitchen, year-round production and active promotion all aim to establish the Tortello as a recognised product distributed beyond the municipality of Pieve Santo Stefano, stimulating the economic growth of the territory. In short, the project not only seeks to preserve a culinary tradition but aspires to make the Tortello di Pieve Santo Stefano a symbol of local identity, contributing to the economic development of the community and to the promotion of the Repubblica delle Foreste.
